New Years Eve Champagne Punch

Can you believe another year is almost over?  Time flies!  How do you plan on ringing in the New Year?  Whether it's a quiet night at home or you are hosting a big bash, we have found some great cocktails to toast with. And don't forget to get some sparkling grape juice for the kids!  Cheers!

New Years Eve Champagne Punch

Ingredients:
2 bottles of Champagne (or another sparkling wine)
1 750 ml bottle of Ruby Port
2 cups fresh grapefruit juice
1/2 cup simple syrup (1:1 ratio)
Grapefruit slices for garnish

Instructions:
Place all ingredients in a large punch bowl filled with ice. Large ice works best here, so that the punch is able to hold without diluting too fast (if you don’t have large ice molds, you could freeze large blocks of ice in Tupperware containers).
Garnish with fresh grapefruit slices.



Champagne Margaritas

Champagne Margaritas

Ingredients
For 2 Margaritas:
4 T. sweetened lime juice
2 oz. white tequila
2 oz. Triple Sec
1 T. fresh squeezed lime juice
6 oz. champagne/sparkling wine

For Sugared Rims & Garnish:
About 1 T. turbinado sugar (sugar in the raw)
About 1 T. granulated sugar
Lime wedges

Instructions:
For sugared rims: Combine turbinado and granulated sugar in a shallow dish. Wet the rim of each glass, all the way around, with a lime wedge. Dip each rim into the sugar to coat. Set aside.

For Margaritas: Fill a cocktail shaker with ice. Add the Rose's Sweetened Lime Juice, tequila, Triple Sec, fresh lime juice, and champagne. Gently shake two or three times.
Strain into the prepared glasses and garnish each with a lime wedge.

Minty Pomegranate Spritzer

Minty Pomegranate Spritzer
Serves: 2 cocktails, scale as needed

Ingredients
1/4 cup Stoli Premium Vodka
2 tablespoons minty simple syrup (recipe below)
2 tablespoons pomegranate juice
scoop of crushed ice
1/4 cup prosecco
squeeze of lemon (orange would be good too)

Minty simple syrup: (makes enough for more than 2 cocktails)
1/2 cup sugar
1/2 cup water
handful of mint

Instructions:
Make the minty simple syrup. Combine water and sugar in a small saucepan. Simmer just until the sugar dissolves, whisking occasionally. (just a minute or two). Remove from heat, stir in the mint. Chill until ready to serve, letting the mint continue to steep in the syrup for at least 30 minutes. Strain out the mint before serving.

Mix together the vodka, simple syrup, pomegranate juice and ice. Pour into glasses. Top with prosecco and a squeeze of lemon.

Notes:
Store extra simple syrup in the fridge for up to a week.
